Apulian Pettole: The Traditional Flavor of Christmas Festivities

The Pettole represent one of the culinary treasures of Apulia during the Christmas season, carrying the warmth, aroma, and flavor of authentic Apulian tradition. These small bites of happiness, flavorful and soft, become a true delight during the holiday season.

The tradition of Pettole:

In Apulian families, making Pettole is a ritual that unites and involves different generations. It's a moment where grandparents teach their grandchildren, passing on the recipe that has been handed down over time. These small fried bites, usually made starting from Saint Cecilia's day and throughout the Christmas season, are an essential part of Apulian tables during the festivities.

The recipe for Pettole:

Ingredients:

500g all-purpose flour

25g fresh brewer's yeast

300ml lukewarm water

Salt to taste

Frying oil

Preparation:

In a large bowl, dissolve the yeast in lukewarm water. Add the flour and a pinch of salt to the water and yeast mixture. Knead vigorously until a smooth and soft dough forms. Cover with a cloth and wrap it in a blanket, allowing the dough to rest in a warm place for at least 3-4 hours until it triples in volume (it will be soft and full of bubbles). Heat the oil in a deep and wide pan. Dip a teaspoon in water (to help the dough slide more easily), take some dough and with the help of a finger (or another spoon), let it slide into the hot oil. The Pettole, without being shaped, will take on different and irregular shapes (which children also enjoy!) Fry the Pettole in the hot oil until they become golden on both sides. Drain them on paper towels to remove excess oil. Serve while still hot. Pettole can be enjoyed plain or stuffed in various ways.

To make them sweet, in their most classic version, simply sprinkle them with sugar, but they are also delicious dipped in vincotto, honey, or chocolate.

Moreover, you can also make many savory versions, for example, by adding chopped black or green olives, pieces of cod, or anchovies to the dough.
